Preparing the Cake

    Preheat the Oven

    Preheat your oven to 425°F (220°C). Grease four ramekins with butter and dust with flour, tapping out any excess.

    Melt Butter and Chocolate

    In a heatproof bowl, combine the butter and bittersweet chocolate. Place the bowl over a pot of simmering water (double boiler) and stir until melted and smooth. Alternatively, you can melt in the microwave in 30-second intervals, stirring in between.

    Combine Sugar and Eggs

    In a mixing bowl, whisk together the granulated sugar, large eggs, and egg yolks until well combined and slightly thickened.

    Mix Ingredients Together

    Pour the melted chocolate mixture into the egg and sugar mixture, stirring to combine. Add the flour and a pinch of salt, mixing until just combined, being careful not to overmix.

    Fill Ramekins

    Divide the batter evenly among the prepared ramekins, filling each about 3/4 full.

    Bake

    Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center is still soft.

Serving

    Rest and Serve

    Remove the cakes from the oven and let them sit for 1 minute. Carefully run a knife around the edges and invert each ramekin onto a plate. Serve immediately with a scoop of vanilla ice cream on the side.
