Method
Preparation
- 1
Prep the Chicken
Preheat your oven to 375°F (190°C). Pat the chicken breasts dry with paper towels and season both sides with salt and black pepper.
- 2
Set Up Breading Station
Set up three shallow dishes: one with flour, one with beaten eggs, and one with breadcrumbs.
Cooking
- 3
Bread the Chicken
Dredge each chicken breast in flour, shaking off any excess. Dip into the beaten eggs, and then coat with breadcrumbs, pressing firmly to adhere.
- 4
Fry the Chicken
In a large skillet, heat olive oil over medium heat. Once hot, add the breaded chicken breasts and cook for about 4-5 minutes on each side or until golden brown and cooked through. Transfer to a paper towel-lined plate to drain excess oil.
- 5
Assemble the Dish
In a baking dish, spread a thin layer of marinara sauce at the bottom. Place the fried chicken breasts on top, then spoon more marinara sauce over each piece. Sprinkle mozzarella and parmesan cheese over the sauce.
- 6
Bake
Bake in the preheated oven for about 20 minutes, until the cheese is melted and bubbly.
- 7
Garnish and Serve
Optional: Top with fresh basil before serving. Serve hot over pasta or with a side salad.
