    Caramelize the Onions

    Slice the medium onion thinly. In a skillet, melt 1 tablespoon of butter over medium heat. Add the sliced onions, sprinkle with a pinch of salt, and cook, stirring occasionally, until the onions are caramelized and golden brown, about 15 minutes.

    Cook the Beef Patty

    While the onions are caramelizing, season the 8 oz ground beef with salt and pepper. Form it into a patty and cook in another skillet over medium-high heat for about 4-5 minutes on each side, or until it reaches your desired doneness.

    Assemble the Patty Melt

    Spread 1 tablespoon of mayonnaise on one side of each slice of sourdough bread. Place one slice, mayo side down, on a clean surface. Add the cooked beef patty, top with caramelized onions, and place the Swiss cheese on top. Cover with the second slice of bread, mayo side up.

    Grill the Sandwich

    Heat the skillet used for the beef patty over medium heat. Add a bit of butter if necessary. Place the assembled sandwich in the skillet and cook for 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted.

    Remove the patty melt from the skillet, slice in half if desired, and serve hot.
