Boudin Burger Directions

Prepare the Boudin Balls
In a mixing bowl, combine the boudin sausage, breadcrumbs, egg, salt, and black pepper. Form the mixture into small balls.

Fry the Boudin Balls
Heat vegetable oil in a deep fryer or heavy pot to 350°F (175°C). Carefully drop the boudin balls into the hot oil and fry until golden brown, about 3-4 minutes. Remove and drain on paper towels.

Add Cheese
In the last minute of cooking, place a slice of pepper jack cheese on each patty and cover to melt the cheese.

Assemble the Burger
Spread some Rae Rae sauce on the bottom half of the burger bun. Place the cooked burger patty on top, followed by a generous spoonful of onion jam and the fried boudin balls. Top with the other half of the bun.
