Prepare the Shrimp
In a bowl, mix the buttermilk and Cajun seasoning. Add the shrimp and let marinate for about 15 minutes.

Prepare the Breading
In a shallow dish, combine the cornmeal and flour. Remove the shrimp from the marinade and dredge in the cornmeal mixture, coating well.

Fry the Shrimp
In a large skillet, heat the vegetable oil over medium-high heat. Fry the breaded shrimp in batches until golden brown and cooked through, about 3-4 minutes per side. Remove and drain on paper towels.

Assemble the Po'boy
Slice the French bread lengthwise. Spread mayonnaise on both sides, then layer with lettuce, sliced tomato, and fried shrimp. Drizzle with hot sauce to taste.
