Prepare the Marinade
Remove the stems and seeds from the guajillo chiles and soak them in hot water until softened, about 15 minutes. Blend with honey, salt, and pepper to create a marinade.

Marinate the Chicken
Place chicken breasts in a bowl or resealable bag and pour the guajillo marinade over them. Marinate for at least 1 hour, preferably overnight in the fridge.

Prepare the Slaw
Shred the white cabbage and toss it with a pinch of salt and lime juice. Let it sit to soften slightly.

Grill the Chicken
Preheat a wood grill. Grill the marinated chicken breasts over medium heat until cooked through, about 7-10 minutes per side. During the last few minutes of grilling, top each breast with equal amounts of Oaxacan and Chihuahua cheese to melt.

Plate the grilled chicken and top with cabbage slaw and pico de gallo. Serve immediately.
