Carne Asada

Preparation

    Marinate the Carne Asada

    In a bowl, mix olive oil, lime juice, minced garlic, cumin, chili powder, salt, and black pepper. Add flank steak and marinate for at least 2 hours, preferably overnight.

    Prepare the Aioli

    In a bowl, combine mayonnaise, black habanero, minced garlic, lemon juice, and salt. Mix well and refrigerate until ready to serve.

    Make the Fries

    Preheat oven to 425°F (220°C). Toss cut potatoes in olive oil, minced garlic, and salt. Spread on a baking sheet and bake for 25-30 minutes until crispy, tossing halfway through.

    Finish the Fries

    Remove fries from the oven, drizzle with truffle oil and sprinkle with grated Parmesan cheese. Toss to coat.

    Grill the Carne Asada

    Preheat grill to medium-high heat. Grill marinated flank steak for about 6-8 minutes per side for medium-rare, or until desired doneness.

    Slice the grilled carne asada and serve with black habanero garlic aioli and hand-cut garlic truffle fries.
