Seared Pineapple Achiote Shrimp

Preparation
1. Prepare the Shrimp
In a bowl, combine the shrimp with the achiote paste and diced pineapple. Mix well to coat the shrimp evenly.
2. Cook the Shrimp
Heat a skillet over medium-high heat. Sear the shrimp mixture for about 3-4 minutes, or until the shrimp are cooked through and slightly caramelized. Remove from heat.
3. Make the Mango Slaw
In a large bowl, combine shredded cabbage, julienned mango, red onion, chopped cilantro, lime juice, and salt. Toss well to combine and set aside.
4. Prepare the Aji Verde Sauce
In a blender, combine fresh cilantro, jalapeño, minced garlic, lime juice, olive oil, and salt. Blend until smooth and adjust seasoning to taste.
5. Assemble the Tacos
Warm the corn tortillas in a skillet. Fill each tortilla with the seared shrimp, mango slaw, a drizzle of aji verde sauce, and top with micro cilantro.
6. Serve
Serve the shrimp tacos immediately with extra lime wedges on the side.
