Marinate Duck Breast
In a bowl, combine the duck breasts with the pastor marinade. Ensure the duck is well coated. Cover and refrigerate for at least 2 hours, preferably overnight for deeper flavor.

Sear the Duck Breast
Preheat a skillet over medium-high heat. Remove the duck from the marinade, letting excess marinade drip off. Place the duck breasts skin-side down in the hot skillet. Sear for about 6-8 minutes until the skin is golden and crispy. Flip and cook for an additional 4-6 minutes until the duck is medium-rare. Remove from heat and let rest.

Prepare Brussels Sprouts
While the duck is resting, thinly slice the Brussels sprouts. In the same skillet (add a bit of oil if needed), sauté the sliced Brussels sprouts over medium heat until they are tender and slightly caramelized, about 5-7 minutes.

Slice and Serve
Slice the rested duck breast thinly. On a plate, arrange the sautéed Brussels sprouts, top with slices of duck, and spoon the pineapple and tomatillo pico de gallo over the top. Serve immediately.
