Prepare the Pork Belly
Preheat your oven to 300°F (150°C). Season the pork belly with salt, black pepper, cumin, garlic powder, and onion powder evenly on all sides. Place it in a roasting pan.

Braise the Pork
Pour the orange juice over the pork belly. Cover the pan tightly with foil and braise in the oven for about 3 hours or until the pork is tender.

Crisp the Pork
Remove the foil and increase the oven temperature to 450°F (230°C). Cook for an additional 20-30 minutes, or until the surface is crispy and caramelized. Let it rest before slicing.

Marinate the Onions
While the pork is cooking, slice the red onion thinly and place it in a bowl. Pour the apple cider vinegar over the onions and let them marinate for at least 30 minutes.

Prepare the Tacos
Warm the corn tortillas in a skillet. Assemble the tacos by placing sliced pork belly on the tortilla, topping with marinated red onions, a spoonful of salsa verde, and fresh cilantro.
