Prepare Country Fried Steak

Tenderize the Steak
Pound the beef round steak to about 1/4 inch thickness using a meat mallet.

Fry the Steak
Heat vegetable oil in a large skillet over medium heat. Fry the breaded steak for about 4-5 minutes on each side until golden brown. Remove and let drain on paper towels.
Make Chorizo Gravy

Cook Chorizo
In the same skillet used for frying, remove excess oil, leaving about 2 tablespoons. Add chorizo sausage and cook until browned and crumbled.

Make Roux
Sprinkle the flour over the cooked chorizo and stir to combine. Cook for 1-2 minutes until the flour is lightly browned.

Add Milk
Gradually whisk in the milk, cooking until the gravy thickens. Season with salt and pepper to taste.
Prepare Sides

Cook Fries
Fry or bake the potato fries according to package instructions until crispy.

Toss the mixed salad greens in a bowl and add your favorite salad dressing.
