Prepare the Steak
Tenderize the beef cube steaks with a meat mallet. Season with salt and black pepper.

Dredge the Steak
In one bowl, place the buttermilk, and in another bowl, mix the flour with salt and pepper. Dip each steak in buttermilk, then coat with flour.

Fry the Steak
Heat oil in a large skillet over medium-high heat. Fry each steak for 4-5 minutes on each side until golden brown and cooked through. Remove from skillet and keep warm.

Make the Chorizo Gravy
In the same skillet, remove excess oil, leaving about 1 tablespoon. Add chorizo and cook until browned. Sprinkle flour over chorizo and stir for 1 minute. Gradually add milk, stirring until thickened. Season with salt and black pepper.

In another skillet, prepare the eggs to your liking. Cook the diced potatoes or heat refried beans.
