    Prepare the Ingredients

    Clean and rinse the clams, mussels, and scallops. Peel and devein the shrimp. Cut the chicken and pork into bite-sized pieces. Slice the Portuguese sausage.

    Cook the Meats

    In a large paella pan or skillet, heat some oil over medium heat. Add the chicken, pork, and Portuguese sausage. Cook until browned and cooked through, about 7-10 minutes. Remove from the pan and set aside.

    Sauté the Seafood

    In the same pan, add the cleaned clams, mussels, scallops, shrimp, and lobster. Sauté for 5 minutes until they start to cook. Remove and set aside.

    Prepare the Rice

    In the same pan, add more oil if needed and add the rice. Stir to coat the rice in the oil for about 2 minutes. Then add chicken broth and season with saffron, salt, and pepper. Bring to a boil.

    Combine and Cook

    Once boiling, reduce heat to low and add back the cooked meats and seafood. Cover and simmer for about 20 minutes until the rice is tender and has absorbed the liquid.

    Serve

    Remove from heat and let sit for 5 minutes. Fluff the paella with a fork and serve warm, garnished with lemon wedges.
