    Prepare the Rice

    In a medium pot, bring 2 cups of water to a boil. Add 1 cup of rice and a pinch of salt. Reduce heat to low, cover, and simmer for about 15-20 minutes or until the rice is cooked and water is absorbed. Fluff with a fork and set aside.

    Cook the Vegetables

    In a separate pan, heat a tablespoon of olive oil over medium heat. Add the mixed vegetables and sauté for about 5-7 minutes until tender. Season with salt and pepper to taste. Remove from heat.

    Prepare the Seafood

    In a shallow dish, combine flour, salt, and black pepper. Dredge the codfish fillets in the flour mixture, shaking off any excess. In a large skillet, heat olive oil over medium-high heat. Add the codfish and cook for about 4-5 minutes on each side until golden brown and cooked through. Remove and keep warm.

    Cook the Scallops and Shrimp

    In the same skillet, add the minced garlic and sauté for about 30 seconds. Add the scallops and shrimp, cooking for about 3-4 minutes until they are opaque and cooked through. Season with salt and pepper to taste.

    Serve the Dish

    On a plate, serve the fried codfish fillet alongside the sautéed scallops and shrimp. Add a serving of rice and vegetables on the side. Garnish with lemon wedges.
