Prepare the Filet Mignon
Season the filet mignon steaks with salt and black pepper on both sides. Let them sit at room temperature for about 15-20 minutes.

Sear the Steaks
In a large skillet, heat the olive oil over medium-high heat. Add the steaks and sear them for about 4-5 minutes on each side for medium-rare, adjusting time for desired doneness.

Flambé
Remove the skillet from heat and carefully add the brandy or cognac. Return to high heat and ignite with a long lighter or match. Allow the flames to subside as the alcohol burns off.

Serve
Transfer the steaks to a warm plate, spoon some of the pan juices over the top, and serve immediately.
