    Prepare the Pork

    In a large pot, heat olive oil over medium heat. Add the chopped onion and minced garlic, sauté until the onion is translucent.

    Brown the Meat

    Add the pork cubes to the pot and season with salt, black pepper, and paprika. Cook until the pork is browned on all sides.

    Deglaze with Wine

    Pour in the white wine and scrape the bottom of the pot to release any browned bits. Add the bay leaves.

    Simmer

    Cover the pot and reduce heat to low. Let it simmer for about 30 minutes, stirring occasionally.

    Add Potatoes

    Add the diced potatoes to the pot, stirring to combine. Cover and cook for an additional 20 minutes, or until the potatoes are tender.

    Add Clams

    Stir in the cleaned clams and cover the pot again. Cook for about 5-10 minutes, until the clams have opened.

    Serve

    Remove from heat, discard any unopened clams, and garnish with chopped cilantro before serving.
