    Prepare the Codfish

    Soak the salted codfish in water for at least 24 hours, changing the water several times. Once desalinated, drain and flake the fish into large pieces.

    Cook the Potatoes

    Peel the potatoes and cut them into thin slices. Boil the sliced potatoes in salted water until tender, about 15 minutes. Drain and set aside.

    Sauté the Aromatics

    In a large skillet, heat the olive oil over medium heat. Add sliced onions and minced garlic, and sauté until the onions are translucent.

    Combine Ingredients

    In a large baking dish, layer half of the cooked potatoes, then add the flaked codfish, sautéed onions and garlic, bay leaves, and black olives. Top with the remaining potatoes.

    Add Milk and Season

    Pour the milk over the layered mixture, drizzle with more olive oil, and season with salt and black pepper. Sprinkle chopped parsley on top.

    Bake

    Preheat the oven to 180°C (350°F). Bake the dish for about 30-35 minutes, or until the top is golden and crispy.

    Serve

    Remove from the oven and let it sit for a few minutes before serving. Garnish with additional parsley if desired.
