For the Salmon Bites

    Prepare the Salmon

    Cut the salmon fillets into bite-sized pieces, about 1 inch each.

    Set Up Breading Station

    In three separate bowls, place flour in the first, beaten eggs in the second, and a mixture of bread crumbs, cajun seasoning, salt, and pepper in the third.

    Bread the Salmon Pieces

    Coat each salmon bite in flour, shaking off excess, then dip in the beaten eggs, and finally coat with the bread crumb mixture, pressing lightly to adhere.

    Heat Oil for Frying

    In a large deep pot or deep fryer, heat the oil to 350°F (175°C) over medium heat.

    Fry the Salmon Bites

    Carefully add the breaded salmon bites to the hot oil in batches, frying for about 3-4 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

For the Cajun Remoulade

    Mix Ingredients

    In a medium bowl, combine mayonnaise, Dijon mustard, cajun seasoning, lemon juice, hot sauce, garlic powder, and salt. Stir until well combined.

    Refrigerate the remoulade for at least 30 minutes to allow flavors to meld.
