Prepare the Egg Filling

Peel and Halve the Eggs
Carefully peel the hard-boiled eggs and slice them in half lengthwise. Gently remove the yolks and place them in a mixing bowl.

Make the Filling
To the bowl with the yolks, add mayonnaise, Dijon mustard, salt, black pepper, paprika, and chives or green onions. Mash and mix until smooth and well combined.

Fill the Egg Whites
Spoon or pipe the yolk mixture back into the hollowed-out egg whites. Set aside.

Bread the Eggs
Take each filled egg half, coat it in flour, dip it into the beaten eggs, and then roll it in the bread crumbs until evenly coated.

Heat the Oil
In a large skillet, heat the oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small piece of bread in; it should sizzle.

Fry the Deviled Eggs
Carefully place the breaded egg halves in the hot oil, a few at a time, and fry for about 2-3 minutes on each side or until golden brown. Use a slotted spoon to remove them and drain on paper towels.
