Loaded Mashed Potatoes

    Prepare the Potatoes

    Peel and cut the potatoes into equal-sized chunks. Place them in a large pot and cover with water. Add a pinch of salt.

    Cook the Potatoes

    Bring the pot to a boil over high heat. Once boiling, reduce to a simmer and cook for 15-20 minutes or until the potatoes are fork-tender.

    Mash the Potatoes

    Drain the potatoes and return them to the pot. Add butter, milk, sour cream, salt, and black pepper. Mash until smooth and creamy.

    Add Cheese and Onions

    Stir in the cheddar cheese and chopped green onions until well combined. Adjust seasoning to taste.

Black Eyed Peas and Rice

    Prepare the Ingredients

    Chop the onion and mince the garlic. Rinse the black-eyed peas and rice under cold water.

    Sauté Onion and Garlic

    In a large saucepan, heat olive oil over medium heat. Add the onion and sauté for about 3-4 minutes until translucent. Add minced garlic and sauté for another minute.

    Cook the Peas and Rice

    Add the black-eyed peas and rice to the saucepan. Pour in the chicken broth, and season with salt and black pepper. Bring to a boil, then reduce to low heat, cover, and simmer for 20-25 minutes, or until the rice is tender.

Sautéed Green Beans

    Prepare the Green Beans

    Wash and trim the ends of the green beans. Mince the garlic.

    Sauté the Green Beans

    In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant. Add green beans and sauté for 5-7 minutes until bright green and tender-crisp.

    Season and Serve

    Season with salt, black pepper, and lemon juice. Toss to combine and serve warm.
