Fried Fish

    Prepare the Fish

    Rinse the fish fillets under cold water and pat dry with paper towels.

    Make the Breading

    In a large bowl, combine flour, cornmeal, salt, black pepper, paprika, and garlic powder. Mix well.

    Dredge the Fish

    Dip each fish fillet into the buttermilk, allowing any excess to drip off, and then dredge in the flour mixture until fully coated.

    Heat the Oil

    In a large pot or deep fryer, heat vegetable oil to 350°F (175°C).

    Fry the Fish

    Carefully place the breaded fish fillets into the hot oil. Fry for 4-5 minutes on each side or until golden brown. Remove and drain on paper towels.

Collard Greens

    Prepare the Greens

    Wash the collard greens thoroughly. Remove thick stems and chop the leaves into bite-sized pieces.

    Sauté Onion and Garlic

    In a large skillet, heat olive oil over medium heat. Add chopped onion and sauté until translucent, about 5 minutes. Add minced garlic and sauté for another minute.

    Cook the Greens

    Add chopped collard greens to the skillet. Pour in chicken broth and season with red pepper flakes, salt, and black pepper. Cover and simmer for 25-30 minutes until the greens are tender.

Mac & Cheese

    Cook the Pasta

    In a large pot, bring salted water to a boil. Add elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

    Make the Cheese Sauce

    In the same pot, melt butter over medium heat. Stir in flour and cook for 1 minute. Gradually whisk in milk and cook until thickened, about 3-5 minutes.

    Combine and Serve

    Remove from heat and stir in shredded cheddar cheese until melted. Add the cooked macaroni back into the pot and mix until well combined. Season with salt and black pepper.
