Preparing the Eggs

    Boil the Eggs

    Place the eggs in a pot and cover them with cold water. Bring to a boil over medium-high heat. Once boiling, cover the pot and remove it from the heat. Let it sit for 12 minutes.

    Cool and Peel the Eggs

    After 12 minutes, transfer the eggs to an ice bath for 5 minutes to cool. Once cooled, peel the eggs and cut them in half lengthwise.

    Make the Filling

    Remove the yolks from the egg whites and place them in a bowl. Add mayonnaise, Dijon mustard, salt, black pepper, and paprika. Whip until smooth and creamy.

Preparing the Bacon

    Cook the Bacon

    Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper. Place the bacon slices on the sheet and sprinkle brown sugar on top. Bake for 15-20 minutes or until crispy. Once done, let them cool and crumble into small pieces.

Frying the Eggs

    Prepare the Batter

    In a bowl, whisk together flour, cornstarch, baking powder, and salt. Gradually add water until smooth.

    Fry the Eggs

    Heat the vegetable oil in a deep pot over medium heat. Dip each egg white half into the batter, allowing excess to drip off. Carefully place them in the hot oil and fry until golden brown, about 2-3 minutes. Remove and drain on paper towels.

Assembly

    Assemble the Deviled Eggs

    Fill each fried egg white half with the whipped yolk mixture. Top with crumbled bacon and, if desired, place a grilled shrimp on top of each.
