    Prepare the Marinade

    In a bowl, mix together minced garlic, chopped fresh rosemary, olive oil, salt, black pepper, and lemon juice to create a marinade.

    Marinate the Lamb

    Rub the marinade all over the lamb leg, ensuring it is well coated. Cover and let it marinate in the fridge for at least 2 hours, preferably overnight.

    Preheat the Oven

    Preheat your oven to 180°C (350°F).

    Roast the Lamb

    Place the marinated lamb in a roasting pan and roast in the preheated oven for approximately 1.5 to 2 hours, or until the internal temperature reaches 60°C (140°F) for medium rare. Baste the lamb with its juices every 30 minutes.

    Rest and Serve

    Remove the lamb from the oven, cover it with foil, and let it rest for 15-20 minutes before carving.

Mashed Potatoes

    Prepare the Potatoes

    Peel and chop the Yukon Gold potatoes into evenly-sized pieces.

    Boil the Potatoes

    Place the chopped potatoes in a large pot, cover with cold water, and add a teaspoon of salt. Bring to a boil and cook until the potatoes are fork-tender, about 15-20 minutes.

    Drain and Mash

    Drain the potatoes and return them to the pot. Add butter, milk, salt, and black pepper. Mash the potatoes until smooth and creamy.

    Serve the mashed potatoes alongside the carved lamb for a hearty dinner.
