    Prepare the Water

    In a large saucepan, bring 4 cups of water to a boil over medium-high heat.

    Cook the Grits

    Once boiling, slowly whisk in 1 cup of grits. Reduce heat to low and cover. Cook for 20-25 minutes, stirring occasionally, until thickened.

    Add Cheese and Seasoning

    After the grits are cooked, stir in 1 cup of smoked gouda cheese, 2 tablespoons of butter, 1 teaspoon of salt, and 1 teaspoon of black pepper. Mix until creamy and well combined.

    Prepare the Fish

    Rinse 1 pound of white fish fillets under cold water, then pat dry with paper towels. Cut into serving-size pieces.

    Set Up Breading Station

    In one bowl, place 1 cup of flour. In a second bowl, whisk together 2 large eggs. In a third bowl, combine 1 cup of cornmeal, 1 teaspoon of salt, 1 teaspoon of black pepper, 1 teaspoon of paprika, and 1 teaspoon of cayenne pepper.

    Bread the Fish

    Dredge each piece of fish in flour, dip into the egg mixture, then coat with the cornmeal mixture. Ensure each piece is evenly coated.

    Heat the Oil

    In a deep skillet or fryer, heat 2 cups of oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Fish

    Carefully place the breaded fish into the hot oil, frying in batches if necessary. Fry for about 3-4 minutes per side, or until golden brown and cooked through. Remove and drain on paper towels.

Assembly

    Spoon a generous portion of the smoked gouda grits onto each plate. Top with the fried fish.

    Garnish with lemon wedges and chopped fresh parsley before serving.
