    Make the Dough

    In a large bowl, combine warm water and active dry yeast. Allow to sit for about 5 minutes until frothy. Add flour, salt, and olive oil, and mix until a dough forms. Knead on a floured surface for about 5-7 minutes until smooth.

    Let the Dough Rise

    Place the dough in a greased bowl, cover with a damp cloth, and let rise in a warm place for 1 hour or until doubled in size.

    Prepare the Filling

    In a bowl, mix together mozzarella, ricotta, parmesan, black pepper, and fresh basil until well combined.

    Shape and Fill the Calzone

    Preheat your oven to 475°F (245°C). Punch down the dough and divide it into 4 equal pieces. Roll each piece into a circle about 8 inches in diameter. Place a generous amount of cheese filling on one half of the circle, and add your choice of toppings. Fold the other half over and press the edges to seal.

    Bake the Calzone

    Place the calzones on a baking sheet lined with parchment paper. Bake for 15-20 minutes or until golden brown. Let cool for a few minutes before serving.
