Prepare the Chicken
Cut the boneless chicken thighs into bite-sized pieces.

Make the Batter
In a bowl, mix the flour, cornstarch, salt, black pepper, paprika, and garlic powder. In another bowl, whisk together the eggs and buttermilk.

Coat the Chicken
Dip each piece of chicken into the buttermilk mixture, then coat it in the flour mixture. Ensure each piece is evenly coated.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

Fry the Wings
Fry the chicken pieces in batches for about 5-7 minutes or until golden brown and cooked through. Remove and place on paper towels to drain excess oil.

Toss with Sauce or Dry Rub
Toss the fried wings in your choice of sauce or dry rub until evenly coated.

Serve the boneless wings with celery sticks and your choice of ranch or bleu cheese dressing.
