Make the Dough
In a large bowl, dissolve the sugar in warm water, then sprinkle the yeast over the top. Let it sit for about 5 minutes until frothy. Stir in the salt and gradually add the flour until a dough forms. Knead for about 5-7 minutes until smooth.

Let the Dough Rise
Place the dough in a lightly greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Shape the Pretzel Sticks
Preheat your oven to 450°F (230°C). Punch down the risen dough and divide it into 8 equal portions. Roll each portion into a long rope about 12 inches in length. Shape each rope into a pretzel stick.

Prepare the Baking Soda Bath
In a large pot, bring 10 cups of water to a boil and add the baking soda. Carefully add pretzel sticks one at a time and boil for about 30 seconds each. Remove and place on a greased baking sheet.

Bake the Pretzel Sticks
Sprinkle the boiled pretzel sticks with coarse sea salt and bake in the preheated oven for about 12-15 minutes until golden brown.
