Method
Preparation of Chicken
- 1
Prepare the Chicken
Trim excess fat from the chicken thighs and cut them into bite-sized pieces.
- 2
Marinate the Chicken
In a bowl, mix the chicken pieces with half of the teriyaki sauce (reserve the other half for later). Let it marinate for at least 30 minutes, or overnight in the refrigerator for maximum flavor.
Making the Teriyaki Sauce
- 3
Combine Sauce Ingredients
In a saucepan, combine soy sauce, brown sugar, mirin, rice vinegar, sesame oil, minced garlic, and minced ginger. Stir well over medium heat until the sugar dissolves.
- 4
Thicken the Sauce
In a small bowl, mix cornstarch and water to create a slurry. Add this to the saucepan and stir until the sauce thickens, about 2-3 minutes. Remove from heat and set aside.
Cooking the Chicken
- 5
Heat the Oil
In a large skillet or wok, heat vegetable oil over medium-high heat.
- 6
Cook the Chicken
Add the marinated chicken pieces to the skillet, cooking for 5-7 minutes or until they are cooked through and browned on the outside.
- 7
Add the Sauce
Pour the reserved teriyaki sauce over the chicken in the skillet. Cook for an additional 2-3 minutes, stirring to coat the chicken evenly.
Garnishing and Serving
- 8
Garnish the Dish
Sprinkle sesame seeds and sliced green onions over the chicken before serving.
- 9
Serve
Serve the teriyaki chicken hot over steamed rice or noodles.
