Prepare the Beef
Thinly slice the beef sirloin against the grain into bite-sized pieces.
Cook the Noodles
In a large pot of boiling water, cook the udon noodles according to package instructions until tender. Drain and set aside.
Heat the Oil
In a large pot or Dutch oven, heat the vegetable oil over medium-high heat.
Cook the Beef
Add the sliced beef to the pot, cooking until browned on all sides (about 3-4 minutes).
Add the Broth and Seasonings
Pour in the beef broth, soy sauce, mirin, salt, and black pepper. Stir well to combine.
Simmer the Broth
Bring the mixture to a simmer and let it cook for about 10 minutes, allowing the flavors to meld.
Combine Noodles and Broth
Add the cooked udon noodles to the pot and stir gently to combine. Cook for an additional 2-3 minutes until heated through.
Finish with Green Onions and Sesame Oil
Remove from heat and stir in the chopped green onions and sesame oil before serving.
