Prepare Sushi Rice

Rinse the Rice
Rinse the sushi rice in cold water until the water runs clear to remove excess starch.

Cook the Rice
In a rice cooker or saucepan, combine the rinsed sushi rice and water. Cook according to rice cooker instructions or bring to a boil, then reduce heat and simmer covered for 20 minutes.

Season the Rice
Once cooked, transfer the rice to a large bowl. Mix rice vinegar, sugar, and salt in a small bowl until dissolved, then gently fold this mixture into the rice using a spatula. Allow it to cool.

Lay Nori
Place a sheet of nori on a bamboo sushi mat, shiny side down.

Add Rice
Wet your hands to prevent sticking, then take a handful of sushi rice (about 1 cup) and evenly spread it over the nori, leaving about 1 inch of space at the top.

Roll the Sushi
Using the bamboo mat, start rolling the nori away from you, applying gentle pressure to keep the roll tight. Seal the edge with a little water.

Slice the Roll
Use a sharp knife to slice the roll into 6-8 pieces. Wipe the knife with a damp cloth between cuts for clean slices.
Serve

Plate the Sushi
Arrange the sushi rolls on a serving plate. Serve with soy sauce, wasabi, and pickled ginger on the side.
