Nori and Extras

Method

Prepare Sushi Rice

  1. 1

    Rinse the Rice

Rinse the sushi rice in cold water until the water runs clear to remove excess starch.

  2. 2

    Cook the Rice

In a rice cooker or saucepan, combine the rinsed sushi rice and water. Cook according to rice cooker instructions or bring to a boil, then reduce heat and simmer covered for 20 minutes.

  3. 3

    Season the Rice

Once cooked, transfer the rice to a large bowl. Mix rice vinegar, sugar, and salt in a small bowl until dissolved, then gently fold this mixture into the rice using a spatula. Allow it to cool.

Prepare Fillings

  1. 4

    Cut the Vegetables and Fish

Julienne the cucumber and carrot. Slice the avocado. If using, shred the crab meat and chop the smoked salmon into strips.

Assemble Sushi Rolls

  1. 5

    Lay Nori

Place a sheet of nori on a bamboo sushi mat, shiny side down.

  2. 6

    Add Rice

Wet your hands to prevent sticking, then take a handful of sushi rice (about 1 cup) and evenly spread it over the nori, leaving about 1 inch of space at the top.

  3. 7

    Add Fillings

Arrange the julienned cucumber, carrot, sliced avocado, crab meat, and smoked salmon in a line across the center of the rice.

  4. 8

    Roll the Sushi

Using the bamboo mat, start rolling the nori away from you, applying gentle pressure to keep the roll tight. Seal the edge with a little water.

  5. 9

    Slice the Roll

Use a sharp knife to slice the roll into 6-8 pieces. Wipe the knife with a damp cloth between cuts for clean slices.

Serve

  1. 10

    Plate the Sushi

Arrange the sushi rolls on a serving plate. Serve with soy sauce, wasabi, and pickled ginger on the side.
