Method
Preparing the Prawn Mixture
Blend the Prawns
In a food processor, add the shelled and deveined prawns. Blend until the prawns form a smooth paste.
Mix Dry Ingredients
In a mixing bowl, combine the rice flour, tapioca flour, salt, and white pepper. Mix well to ensure even distribution.
Combine Ingredients
Add the blended prawn paste to the dry ingredients. Gradually mix in water until you achieve a thick, dough-like consistency.
Form the Mixture
Transfer the mixture to a clean surface and knead it gently until smooth. Shape it into a log, approximately 2 inches in diameter.
Preparing to Fry
Chill the Mixture
Wrap the log in plastic wrap and refrigerate for at least 1 hour to firm up.
Slice the Log
Once chilled, remove the log from the refrigerator and unwrap it. Slice the log into thin rounds, about 1/8 inch thick.
Frying the Crackers
Heat the Oil
In a deep pan or fryer, heat the vegetable oil over medium-high heat until it reaches 180°C (350°F).
Fry the Crackers
Carefully drop the sliced crackers into the hot oil, a few at a time. Fry until they puff up and turn golden brown, about 30 seconds.
Drain Excess Oil
Using a slotted spoon, remove the crackers from the oil and place them on paper towels to drain excess oil.

Serve
Allow the prawn crackers to cool, then serve them as a tasty snack or appetizer. Enjoy!
