Preparing Sushi Rice

Rinse the Rice
Rinse 2 cups of sushi rice under cold water until the water runs clear. This removes excess starch.

Cook the Rice
In a rice cooker or pot, combine the rinsed rice and 2.5 cups of water. Cook according to the rice cooker instructions or bring to a boil, then reduce the heat to low, cover, and simmer for 20 minutes.

Season the Rice
In a small bowl, mix 1 tablespoon of rice vinegar, 1 tablespoon of sugar, and 0.5 teaspoon of salt until dissolved. Once the rice is cooked, let it cool slightly, then gently fold in the vinegar mixture.

Slice the Fish
Using a sharp knife, slice the fresh salmon and tuna fillets into thin strips, about 0.5 cm thick.

Prepare Nori Sheets
Cut the nori sheets in half to create rectangles that are easier to work with for rolling sushi.
Assembling the Sushi

Roll Sushi
Place a nori sheet on a bamboo sushi mat, shiny side down. Wet your hands to prevent sticking. Take a handful of sushi rice and spread it evenly over the nori, leaving a 2 cm border at the top.

Roll it Up
Using the mat, carefully roll the sushi away from you, pressing gently but firmly to create a tight roll. Seal the edge with a little water.

Slice the Rolls
Using a sharp knife, slice the sushi roll into bite-sized pieces. Wipe the knife with a damp cloth between cuts for clean slices.
Serving

Prepare the Platter
Arrange the sliced sushi rolls on a platter. Add small bowls of soy sauce, wasabi, and pickled ginger for dipping.
