Chicken Katsu

Curry Sauce

Method

Chicken Katsu

  1. 1

    Prepare the Chicken

Season the chicken breasts with salt and black pepper on both sides.

  2. 2

    Coat the Chicken

Dredge each seasoned chicken breast in all-purpose flour, shaking off excess. Then dip in beaten eggs, and finally coat with panko breadcrumbs, pressing gently to adhere.

  3. 3

    Fry the Chicken

In a large skillet, heat vegetable oil over medium-high heat. Fry the coated chicken breasts for about 5-7 minutes on each side or until golden brown and cooked through. Remove from skillet and let drain on paper towels.

Curry Sauce

  1. 4

    Sauté Vegetables

Chop the onion, garlic, ginger, carrot, and potato into small pieces. In a saucepan, add a little oil and sauté the onion, garlic, and ginger over medium heat until the onion is translucent.

  2. 5

    Add Vegetables and Spices

Add the chopped carrot and potato to the saucepan. Stir in the curry powder and cook for an additional 2 minutes.

  3. 6

    Add Broth and Simmer

Pour in the chicken broth, soy sauce, and honey. Bring to a boil, then reduce the heat to low and let it simmer for 15 minutes, or until the vegetables are tender.

  4. 7

    Thicken the Sauce

In a small bowl, mix the cornstarch with water until smooth. Add this mixture to the curry sauce and stir until it thickens (about 2-3 minutes).
