Prepare the Chicken
Season the chicken breasts with salt and black pepper on both sides.

Coat the Chicken
Dredge each seasoned chicken breast in all-purpose flour, shaking off excess. Then dip in beaten eggs, and finally coat with panko breadcrumbs, pressing gently to adhere.

Fry the Chicken
In a large skillet, heat vegetable oil over medium-high heat. Fry the coated chicken breasts for about 5-7 minutes on each side or until golden brown and cooked through. Remove from skillet and let drain on paper towels.

Add Broth and Simmer
Pour in the chicken broth, soy sauce, and honey. Bring to a boil, then reduce the heat to low and let it simmer for 15 minutes, or until the vegetables are tender.

Thicken the Sauce
In a small bowl, mix the cornstarch with water until smooth. Add this mixture to the curry sauce and stir until it thickens (about 2-3 minutes).
