Broth Preparation

    Prepare the Broth

    In a large pot, combine the beef bones and water. Bring to a boil over medium-high heat. Skim off any foam that rises to the surface.

    Simmer the Broth

    Reduce the heat to low and add the soy sauce, mirin, ginger, garlic, and green onions. Cover and let simmer for at least 2 hours, or until the broth is rich and flavorful. Adjust salt to taste.

    Strain the Broth

    Once the broth is ready, strain it through a fine mesh sieve into another pot. Discard the solids and keep the broth warm.

Noodles and Toppings Preparation

    Cook the Ramen Noodles

    In a separate pot, bring water to a boil and cook the ramen noodles according to package instructions until al dente. Drain and set aside.

    Prepare Toppings

    In a skillet, heat sesame oil over medium heat. Add the sliced beef sirloin and cook until browned. Add the sliced mushrooms and spinach, cooking until the spinach is wilted.

    Boil the Eggs

    In a small pot, bring water to a gentle boil. Carefully add the eggs and boil for 6-7 minutes for soft-boiled eggs. Remove and place in ice water to stop cooking. Once cooled, peel and set aside.

    Assemble the Ramen

    In serving bowls, divide the cooked ramen noodles. Ladle the hot beef broth over the noodles, and top with the beef, mushrooms, spinach, and halved soft-boiled eggs. Garnish with nori strips and drizzle chili oil to taste.
