Cook the Pasta

In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

Make the Cheese Sauce

In the same pot, melt the butter over medium heat. Add the flour and whisk constantly for about 1-2 minutes until the mixture is bubbly and golden.

Add Milk

Gradually pour in the milk while whisking continuously to avoid lumps. Cook for about 5-7 minutes, stirring frequently, until the mixture thickens.

Incorporate the Cheeses

Lower the heat and add the smoked Gouda and sharp cheddar cheese to the sauce. Stir until the cheeses have melted and the sauce is smooth.

Season the Sauce

Add garlic powder, onion powder, smoked paprika, salt, and black pepper. Stir to combine.

Combine Pasta and Sauce

Add the cooked macaroni to the cheese sauce and stir until the pasta is evenly coated.

Optional Topping

If using breadcrumbs, transfer the mac and cheese to a baking dish, sprinkle breadcrumbs on top, and broil for 2-3 minutes until golden and crispy.
