Prepare the Ingredients
Preheat your oven to 200°C (400°F). Clean and slice the mushrooms. Slice the onion, green pepper, and pickled jalapeños. Halve the grape tomatoes and chop the artichoke hearts.

Caramelize the Onions
In a pan over medium heat, add 1 tablespoon of olive oil and the sliced onions. Cook, stirring occasionally, until they are golden brown and caramelized, about 10-15 minutes.

Roast the Mushrooms
On a large baking sheet, toss the mushrooms with 2 tablespoons of olive oil, salt, and black pepper. Spread them out in a single layer and roast for 15 minutes.

Combine the Ingredients
After 15 minutes, remove the mushrooms from the oven and add the caramelized onions, black olives, green peppers, grape tomatoes, roasted corn, grilled pineapple, pickled jalapeños, spinach, arugula, and artichoke hearts. Toss everything together on the baking sheet.

Final Roast
Return the baking sheet to the oven and roast for an additional 10-12 minutes until the vegetables are heated through and slightly charred.
