Prepare the Chicken
Preheat your oven to 425°F (220°C). Remove the giblets from the chicken and pat it dry with paper towels.

Rub the entire chicken with olive oil, then season generously with salt and black pepper. Insert the garlic cloves and rosemary inside the cavity of the chicken.

Cut the lemon in half and place one half inside the cavity of the chicken and squeeze the juice of the other half over the skin.

Place the chicken breast-side up in a roasting pan. Roast in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C).
