Roast the Mushrooms
Preheat your oven to 200°C (400°F). In a mixing bowl, toss the cleaned and sliced mushrooms with olive oil, salt, and pepper. Spread them out on a baking sheet in a single layer and roast for 20 minutes until golden brown.

Prepare the Garlic Parmesan Sauce
In a small saucepan, heat a tablespoon of olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute. Reduce heat to low and stir in grated Parmesan cheese until melted and creamy. Remove from heat and set aside.

Assemble the Dish
Once the mushrooms are roasted, remove them from the oven. Drizzle truffle oil over the mushrooms and mix gently. Layer the roasted mushrooms on a serving plate, spoon the garlic Parmesan sauce over them, and top with shredded mozzarella cheese.

Return the assembled dish to the oven for an additional 5-7 minutes, or until the mozzarella is melted and bubbly.

Remove from the oven and let it cool slightly. Top with fresh arugula and serve immediately.
