Cheese Making Process

    Prepare the Milk

    In a large pot, heat the whole milk over medium heat until it reaches 190°F (88°C), stirring occasionally to prevent scorching.

    Add Lemon Juice

    Once the milk reaches the desired temperature, remove it from heat and add the lemon juice slowly while stirring gently. Allow the mixture to sit for about 10 minutes until curds form.

    Strain the Curds

    Line a colander with cheesecloth and pour the curdled mixture into it. Let it drain for about 15-20 minutes to remove the whey.

    Season the Cheese

    Once the curds have drained, transfer them to a bowl and stir in salt and heavy cream to achieve your desired flavor and creaminess.

    Shape and Chill

    Shape the cheese into a ball or a log, wrap it in plastic wrap, and refrigerate for at least 2 hours before serving.
