    Activate the Yeast

    In a small bowl, mix warm water (about 110°F) with sugar and yeast. Let it sit for 5-10 minutes until frothy.

    Make the Dough

    In a large mixing bowl, combine flour and salt. Add the yeast mixture and melted butter. Mix until a dough forms.

    Knead the Dough

    Turn the dough onto a floured surface and knead for about 8-10 minutes until smooth and elastic.

    First Rise

    Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.

    Shape the Pretzels

    Preheat the oven to 450°F (232°C). Punch down the dough, and divide it into 8 equal pieces. Roll each piece into a long rope and shape into a pretzel.

    In a large pot, bring 10 cups of water to a boil. Add baking soda carefully.

    Drop each pretzel into the boiling water for 30 seconds. Remove with a slotted spoon and place on a baking sheet lined with parchment paper.
