Preparation

    Prepare the Ribs

    Preheat your oven to 160°C (320°F). Rinse the pork spare ribs under cold water and pat them dry with paper towels. Season both sides with salt and black pepper.

    Make the Sauce

    In a medium bowl, combine brown sugar, soy sauce, rice vinegar, ketchup, minced garlic, grated ginger, and red pepper flakes. Mix well until the sugar is dissolved.

    Bake the Ribs

    Place the seasoned ribs on a baking tray lined with aluminum foil. Brush half of the sweet-sour sauce over the ribs. Cover with foil and bake for 2 hours.

    Add Pineapple and Glaze

    After 2 hours, remove the foil and add pineapple chunks over the ribs. Brush with the remaining sauce and increase the oven temperature to 200°C (400°F). Bake uncovered for an additional 30 minutes, basting occasionally.

Serving

    Serve the Ribs

    Once the ribs are caramelized and tender, remove them from the oven. Let them rest for a few minutes before cutting into portions. Serve hot with extra pineapple and sauce.
