Method
Lomi Salmon Preparation

Dice fresh salmon into small pieces and combine with diced tomatoes, chopped green onion, sea salt, and lime juice. Mix well and set aside in the refrigerator to chill for 30 minutes.
Haupia Preparation

In a saucepan, combine coconut milk, sugar, and water. In a separate bowl, mix cornstarch with a little water to create a slurry. Stir the slurry into the pan and cook over medium heat, stirring constantly until thickened. Pour into molds and refrigerate until set.
Laulau Preparation

Wrap the pork shoulder in ti leaves and sprinkle with sea salt. Steam for about 3-4 hours until tender.
Kalua Pig Preparation

Rub the pork butt with sea salt and liquid smoke. Wrap in foil and bake at 300°F for 6 hours until tender.
Chicken Long Rice Preparation

Boil chicken thighs in chicken broth until cooked, then shred. Cook long rice noodles as per package instructions. Combine noodles, shredded chicken, green onions, and soy sauce in a pot and mix well.
Squid Luau Preparation

In a pot, combine cleaned squid and taro leaves with coconut milk and sea salt. Simmer until squid is tender.
Serving

Serve the Lomi Salmon, Haupia, choice of protein (Laulau, Kalua Pig, Chicken Long Rice, or Squid Luau), and rice or poi on plates for 4 people.
