Prepare the Ingredients
Chop and prepare all the vegetables: dice the tomatoes, slice the bell peppers and onions, and chop the celery. Cut the beef into bite-sized pieces.

Add Tomatoes and Broth
Stir in the diced tomatoes, beef broth, bay leaves, and thyme. Bring the mixture to a boil.

Once boiling, reduce the heat to low and cover the pot. Let it simmer for about 1 hour, or until the beef is tender and flavorful. Stir occasionally.

Taste the soup and adjust seasoning with more salt and pepper if needed. Remove the bay leaves before serving.
