    Prepare the Tripe

    Rinse the honeycomb tripe under cold water, then cut it into bite-sized pieces. Pre-cook the tripe by boiling it in salted water for about 30 minutes. Drain and set aside.

    Chop Vegetables

    Dice the carrots, celery, potatoes, onion, and mince the garlic.

Cooking

    Sauté Vegetables

    In a large pot, heat the olive oil over medium heat. Add the onion and garlic, sauté until translucent. Then add the carrots and celery, cooking for another 5 minutes.

    Add Tomatoes and Seasoning

    Stir in the diced tomatoes, bay leaves, thyme, paprika, salt, and pepper. Let this mixture cook for about 5 minutes.

    Add Tripe and Potatoes

    Add the pre-cooked tripe and potatoes to the pot. Pour in enough water or stock to cover the ingredients. Bring to a boil.

    Simmer the Stew

    Reduce heat to low and let the stew simmer for about 1.5 to 2 hours, or until the tripe is tender and the flavors meld together.

    Serve

    Remove bay leaves before serving. Taste and adjust seasoning if needed. Serve hot.
