    Sear the Beef

    In a large pot or Dutch oven, heat olive oil over medium-high heat. Add the beef pieces and sear until browned on all sides. Remove the beef and set aside.

    Sauté Vegetables

    In the same pot, add the chopped onion and sauté until translucent. Add the minced garlic, diced carrots, diced celery, and cooked for 3-4 minutes until slightly softened.

    Combine Ingredients

    Return the seared beef to the pot. Stir in the tomato paste, canned diced tomatoes (with juice), beef broth, bay leaves, and thyme. Season with salt and black pepper.

    Add Potatoes

    Add the diced potatoes to the pot. Bring the mixture to a boil.

    Simmer

    Reduce the heat to low, cover, and let it simmer for 1.5 to 2 hours or until the beef is tender and the flavors are well combined.

    Serve

    Remove bay leaves before serving. Taste and adjust seasoning if necessary. Serve hot with crusty bread.
