Prepare the Meat
In a large pot, add the salted beef or pork and cover it with water. Bring to a boil over medium heat. Once boiling, reduce the heat and simmer for about 1 hour to tenderize the meat.

Simmer the Soup
Continue to simmer for an additional 30-40 minutes until the vegetables are tender and the meat is fully cooked.

Finally, add the fresh watercress to the pot and allow it to cook for an additional 5 minutes until wilted. Taste the soup and adjust seasoning with salt if necessary.
