Prepare Pork Belly

Season the Pork
Rub the pork belly with salt, black pepper, and garlic powder. Make sure to cover all sides.

Cook the Pork
In a large pot, heat the oil over medium-high heat. Once hot, carefully add the pork belly and fry until golden brown and crispy, about 15-20 minutes on each side.

Drain the Pork
Once cooked, remove the pork belly and let it drain on paper towels to remove excess oil.

Mix Marinade
In a separate small bowl, whisk together the olive oil, vinegar, honey, salt, and pepper.

Combine
Pour the marinade over the chopped tomatoes and onions. Toss to combine and let it marinate for at least 30 minutes.
Serve

Plate the Dish
Slice the crispy pork belly and serve it alongside the marinated tomatoes and onions.
