Preparation Instructions
1. Cook the Pasta
In a large pot, bring salted water to a boil. Add the cavatappi pasta and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process.
2. Prepare the Vegetables
While the pasta cooks, prepare the mixed greens, diced tomato, diced cucumber, and sliced red onion. Place them in a large salad bowl.
3. Add Olives and Feta
Once the pasta has cooled, add it to the salad bowl along with the Kalamata olives and crumbled feta cheese.
4. Make the Dressing
In a separate bowl, whisk together 1/2 cup of yogurt, 2 tablespoons of olive oil, 1 tablespoon of lemon juice, and a pinch of salt and pepper to taste. Adjust seasoning as desired.
5. Combine and Serve
Drizzle the spicy yogurt dressing over the salad and toss gently to combine. Serve immediately.
