1. Prepare the Meatballs
In a large mixing bowl, combine ground beef, minced garlic, grated ginger, chopped green onion, soy sauce, sesame oil, breadcrumbs, egg, salt, and black pepper. Mix until well combined.
2. Shape the Meatballs
Form the mixture into meatballs, about 1 inch in diameter, and place them on a baking sheet lined with parchment paper.
3. Bake the Meatballs
Preheat your oven to 400°F (200°C). Bake the meatballs for 20-25 minutes or until cooked through and browned.
4. Make the BBQ Sauce
While the meatballs are baking, combine gochujang, honey, rice vinegar, soy sauce, minced garlic, and sesame seeds in a small saucepan. Cook over medium heat, stirring until well mixed and slightly thickened.
5. Toss and Serve
Once the meatballs are done, remove them from the oven and toss them in the Korean BBQ sauce. Serve warm, garnished with additional green onions or sesame seeds if desired.
