For the Pesto Cream Sauce
1. Cook the Sauce
In a skillet, heat olive oil over medium heat. Add minced garlic and sliced mushrooms, sauté until mushrooms are tender. Stir in diced tomatoes and cook for another 2 minutes.
2. Combine with Pesto and Cream
Lower the heat and add basil pesto and heavy cream to the skillet. Stir well and let simmer for 5 minutes. Adjust seasoning with salt and pepper.
3. Combine Tortelloni and Sauce
In a large pot of boiling salted water, cook tortelloni for about 4 minutes or until they float to the top. Drain and add to the pesto cream sauce. Toss gently to coat.
4. Serve
Serve hot, garnished with additional parmesan cheese if desired.
